A Scotch fillet of Free Range Pork, very lean, no skin (No Crackle), stuffed with our Mondo macadamia stuffing, marinated in Extra Virgin Olive Oil and our Mondo Spice Mix.

Free Range Pork, Macadamia Nuts, Leek, Onion, Sage, Extra Virgin Olive Oil, Mondo Spice Mix (Organic Lake Salt, Black Pepper, Paprika, Rosemary, Thyme, Basil, Marjoram, Oregano, Sage).
Remove all glad wrap, paper or cryovac bag from the product. After resting for 1 hour at room temperature, Rub the stocking net covering on the product with olive oil.
bake in a pre-heated oven at 160°C. Cook the roast to an internal temperature of 62°C (measured with a meat thermometer) using a rack in the tray if possible. Do not overcook this product as it will be too dry. Baste often during cooking using oil or the products own juices. Allow to rest for 20 to 30 minutes in alfoil before carving. Stocking net peels off very easily when wet with juices. Use sharp knife or scissors.
